A Fine Dining Experience at The Pier with Cathay Pacific

The Pier, the first-class lounge at Hong Kong International Airport, now serves refined versions of traditional Chinese dishes with a modern approach, showcasing Cathay Pacific’s commitment to superior service on both land and air.

This collaboration introduces a dynamic tasting menu near The Pier, as well as à la carte offerings. Inspired by seasonality, balance, and Hong Kong’s rich culinary tradition, Mott 32’s signature dishes have been painstakingly reinvented to provide an elegant but authentic dining experience in a lounge atmosphere.

Vivian Lo, Cathay Pacific’s General Manager of Customer Experience and Design, expressed her enthusiasm:

“As a world-renowned fine-dining establishment, Mott 32 is deservedly celebrated for its innovative approach and dedication to true Chinese flavours. This deeply resonates with our commitment to pursuing quality and service excellence at Cathay and offering our customers a truly memorable dining experience by partnering with premium, award-winning brands that share our values.”

Mott 32 Co-Founder Malcolm Wood echoed this statement by saying:

“We are thrilled to partner with Cathay Pacific, an icon of Hong Kong, to bring Mott 32’s authentic Chinese cuisine to The Pier, First Class Lounge. With nine locations globally and nine more in development, Mott 32 has always strived to celebrate Hong Kong’s rich culinary heritage on the world stage. This collaboration is a testament to our shared commitment to showcasing the vibrant flavours and traditions of our home city. Together, Mott 32 and Cathay Pacific are proud to share the essence of Hong Kong with travellers from across the globe, elevating their journey with an unforgettable taste of its culture and cuisine.”

A New Menu of Taste, Tradition, and Innovation

Mott 32 Co-Founder Xuan Mu expressed his thoughts about the menu:

“For this partnership, we’ve carefully crafted a menu that reflects the essence of Mott 32 while tailoring it specifically for Cathay Pacific’s discerning guests. Each dish has been reimagined to suit the elegant lounge setting. We focused on delivering an authentic yet innovative experience that embodies the harmony of traditional techniques and contemporary flavours.”

Starting off with the main dishes, travellers can now experience the exquisite taste of braised wagyu beef with aged tangerine peel. Travellers can also get crispy black cod with golden garlic and chilli, which is inspired by Hong Kong’s unique shelter cooking style. Lastly, pan-fried prawns with pickled ginger and chilli bean paste is also a selection in this exclusive menu.

Moving on to starters, travellers will be offered crispy mushrooms with green beans coated with sesame, chilled tofu with roasted green chilli sauce or a delicate crispy crab puff. The menu also features free-range chicken with black truffle and coriander or Sichuan peppercorn and chilli sauce and lastly pork dumplings with chilli sauce.

To enhance the experience, specially crafted Hong Kong Iced Tea completes this fine menu. This unique version of the iced tea includes a mix of tea and blackcurrant with tequila and Lillet Blanc as well as basil seeds.
